Papaya Banana Smoothie

Ingredients 

  • 1 Ripe Martha's Best Papaya, peeled, seeded and diced
  • 1 ripe banana, peeled and sliced
  • 1 cup milk
  • 1/4 cup Greek yogurt
  • 1 tsp pure vanilla extract
  • 1 cup ice cubs 

Instructions

Combine papaya, banana, milk, greek yogurt and ice cubes into a blender and blend until smooth. Pour into large glass and enjoy a refreshingly healthy smoothie to start your day!

Yield: 1 serving





Papaya & Avocado Salad

Ingredients

  • 2 Martha's Best Papayas, peeled, halved and seeded
  • 2 avocados, peeled, halved and seeded
  • 1 lime, zested and juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon sugar
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne
  • 1/4 cup extra-virgin olive oil

Instructions

Slice the avocados lengthwise into 1/2 inch thick slices. Slice the papayas widthwise into 1/2 inch thick slices. Arrange overlapping slices on a serving platter, alternating slices of avocado and papaya.  

In a small bowl, combine the remaining ingredients and stir to combine. Spoon the dressing over the avocado and papaya.

Serve immediately and enjoy!

Yield: 4 servings 

 

 

 

 


Papaya Mango Salsa

Ingredients

  • 1 Martha's Best Papaya peeled, seeded and diced
  • 1 mango peeled, seeded and diced
  • 1 large red bell pepper, seeded and diced
  • 1 avocado peeled, pitted and diced
  • 1/2 sweet inion, peeled and diced
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp balsamic vinegar
  • salt and pepper to taste

Instructions

In a medium bowl, mix papaya, mango, red bell pepper, avocado, sweet onion, cilantro and balsamic vinegar. Season with salt and pepper.

Cove and chill in the refrigerator at least 30 minutes before serving.

Yield: 8 servings 


Papaya with Shrimp

Ingredients

  •  2 Martha's Best ripe papayas
  • 1-1/2 cup cooked shrimp, peeled and cut into chunks
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1/8 tsp curry powder
  • 1 tbsp minced chutney
  • Salt and pepper to taste
  • Lime wedges

Instructions

Mix the shrimp, mayo, lemon juice, curry powder, chutney, salt and pepper together. Cut papaya in half and remove seeds. 

To serve, pile shrimp salad into papaya halves. Garnish with lime wedges.

Yield: 4 servings


Baked Stuffed Papayas

Ingredients

  •  4 whole Martha's Best ripe papayas (about 12 ounces each)
  • 1 medium onion, chopped
  • 1 clove garlic, finely chopped
  • 1 pound ground beef
  • 1 (16 oz) can whole tomatoes, drained
  • 1 jalapeño chile, finely chopped 
  • 1/2 tsp salt
  • 1/t tsp pepper
  • 2 tbsp Parmesan cheese, grated

Instructions

Cook and stir beef, onion and garlic in 10-inch skillet over medium heat until beef is light brown. Drain; stir in tomatoes with fork. Heat to boiling. Reduce heat; simmer uncovered, until most of the liquid is evaporated, about 10 minutes.

Cut papayas lengthwise into halves and remove seeds. Place about 1/3 cup beef mixture in each papaya half. Sprinkle with cheese.

Arrange in shallow roasting pan. Pour hot water into pan up to 1 inch of tops of papaya halves. Bake, uncovered at 350 degrees until papayas are very tender and hot, about 30 minutes.

Papaya Bread or Muffins

Ingredients 

  • 1 cup peeled, seeded and mashed Martha's Best papaya
  • 1 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1/4 cup chopped walnuts
  • 1/2 cup raisins
  • 1-1/2 cup flour
  • 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp ground ginger

Instructions

Cream sugar with butter until light. Add eggs and beat until fluffy. Add papaya, nuts and raisins and mix. Sift flour with baking powder, soda, salt, cinnamon, allspice and ginger. Add to butter mixture.

For Bread: Pour batter into greased waxed- paper-lined 9 x 5-inch loaf pan. Bake at 325 degrees F. for about 1 hour 5 minutes.

For Muffins: Fill greased muffin pans 3/4 full and bake at 325 degrees F. for 25 minutes.

Yield: 1 loaf or  16 muffins

 

 

 

 

 

 

 


Papaya Pie

Ingredients

  • 4 pounds peeled, seeded Martha's Best ripe papaya 
  • 1 tbsp ground cinnamon
  • 1 tbsp ground nutmeg
  • 1 tbsp ground pumpkin pie spice
  • 1/2 pound brown sugar
  • 1 cup white sugar
  • 3 eggs, beaten
  • 1 9-inch graham cracker pie crust 

Instructions 

Cut papaya meat from skin; cut papaya into chunks. Add brown and white sugar, let set 10-15 minutes. Place sugared papaya in a pot large enough to handle, cook over medium heat until papaya is tender and is easily broken into smaller pieces, about 30 minutes. Stir occasionally to keep papaya from sticking.

Add spices about halfway through the cooking process. When papaya is cooked, allow to cool about 15 minutes and then add the beaten eggs, and pour into the pie shell. Bake at 350 degrees F. for about 45 minutes.

Yield: 1 pie

 

 


Papaya Ice Cream

Ingredients

  •   1 Martha's Best ripe, peeled, seeded and sliced papaya
  • 1 tbsp lemon juice
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1 cup milk
  • 1 cup whipping cream

Instructions

In blender or food processor fitted with metal blade, puree papaya and lemon juice. In a medium saucepan, combine sugar, beaten eggs and milk. Cook and stir over low heat until mixture thickens and coats a spoon. Add - disables the display of the social icon links.

Add pureed papaya and whipping cream. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions

Yield: 1 quart
