| Papayas with Shrimp |

| Ingredients |
- 1-1/2 cups cooked shrimp, peeled and deveined and cut into chunks
- 1/2 cup mayonnaise
- 2 tbsp lemon juice
- 1/8 tsp curry powder
- 1 tbsp minced chutney
- Salt and pepper to taste
- 2 Martha's Best ripe papayas
- Lime wedges

| Instructions |
| Mix shrimp, mayo, lemon juice, curry powder, chutney, salt and pepper together. Cut papayas in half and remove seeds. To serve, pile shrimp salad into papaya halves. Garnish with lime wedges. |

| Papaya Salad |

| Ingredients |
- 4 tablespoons sunflower oil
- 2 tablespoons white wine vinegar
- 1 tablespoon mayonnaise
- 1 clove garlic, crushed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups
Martha's Best
peeled, seeded, and grated green papayas
- 2 tablespoons chopped parsley
- 2 tablespoons freshly squeezed lime juice

Prepare the vinaigrette in a small bowl by combining the oil, vinegar, mayonnaise, garlic, salt, and pepper. Combine the papaya and vinaigrette in a large salad bowl. Sprinkle with parsley and lime juice. | |

| Baked Stuffed Papayas |

| Ingredients |
- 1 medium onion, chopped
- 1 clove garlic, finely chopped
- 1 pound ground beef
- 1 (16-ounce) can whole tomatoes, drained
- 1 jalapeno chile, finely chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 Whole Martha's Best ripe papayas (about 12 ounces each)
- 2 Ttbsp Parmesan cheese, grated

| Cook and stir beef, onion, and garlic in 10-inch skillet over medium heat until beef is light brown. Drain; stir in tomatoes, jalapeno pepper, salt and pepper. Break up tomatoes with fork. Heat to boiling. Reduce heat; simmer uncovered, until most of the liquid is evaporated, about 10 minutes. Cut papayas lengthwise into halves and remove seeds. Place about 1/3 cup beef mixture in each papaya half. Sprinkle with cheese. Arrange in shallow roasting pan. Pour very hot water into pan to within 1 inch of tops of papaya halves. Bake, uncovered, at 350 degrees until papayas are very tender and hot, about 30 minutes. | |

| Papaya Bread or Muffins |

| Ingredients |
- 1 cup sugar
- 1/2 cup butter or margarine
- 2 eggs
- 1 cup peeled, seeded mashed Martha's Best ripe papaya
- 1/4 cup chopped walnuts
- 1/2 cup raisins
- 1-1/2 cup flour
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp ground ginger

| Instructions |
| Cream sugar with butter until light. Add eggs and beat until fluffy. Add papaya, nuts and raisins and mix. Sift flour with baking powder, soda, salt, cinnamon, allspice and ginger. Add to butter mixture. Pour batter into greased waxed-paper-lined 9 x 5-inch loaf pan. Bake at 325 degrees F. for about 1 hour 5 minutes. Or fill greased muffin pans 3/4 full and bake at 325 degrees F. for 25 minutes. | |

| Papaya Pie |

| Ingredients |
- 4 pounds peeled, seeded Martha's Best ripe papaya fruit
- 1 tbsp ground cinnamon
- 1 tbsp ground nutmeg
- 1 tbsp ground pumpkin pie spice
- 1/2 pound brown sugar
- 1 cup white sugar
- 3 eggs, beaten
- 1 9-inch graham cracker pie crust

| Instructions |
| Cut fruit meat from skin; cut fruit into chunks. Add brown and white sugar, let set 10-15 minutes. Place sugared fruit in a pot large enough to handle, cook over medium heat until fruit is tender and is easily broken into smaller pieces, about 30 minutes. Stir occasionally, to keep papaya from sticking. Add spices about halfway through the cooking process. When papaya is cooked, allow to cool about 15 minutes, add the beaten eggs, and place in the pie shell. Bake at 350 degrees F. for about 45 minutes. | |

Martha's Best
ripe, peeled, seeded, and sliced papaya
- 1 tbsp lemon juice
- 3/4 cup sugar
- 2 eggs, beaten
- 1 cup milk
- 1 cup half & half or whipping cream
|
| Instructions |
| In blender or food processor fitted with metal blade, puree papaya and lemon juice. In a medium saucepan, combine sugar, beaten eggs and milk. Cook and stir over low heat until mixture thickens and coats a spoon. Add pureed papaya and half and half. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions. | |
